Chocolate begins as a pod the size of a rugby ball, filled with seeds wrapped in sweet white pulp. Hawaiʻi is the only U.S. state where cacao grows.

Roasted and ground, the seeds become chocolate; the same tree gives both a bitter drink of ceremony and a scoop of gelato.
