Island-Korean Grilled Fish Bowl

Serves 4

Ingredients

  • 1 lb firm white fish
  • 3 cups cooked brown rice
  • 3 cups shredded cabbage
  • 1 cucumber, sliced
  • 1 avocado, sliced
  • 1 mango, diced
  • 1 tbsp gochujang
  • 1 tbsp low-sodium shoyu
  • 2 tbsp lime juice

Directions

  1. Whisk gochujang, shoyu, lime, and 1 tablespoon water; reserve half.
  2. Brush fish with remaining sauce and grill until it reaches 145°F.
  3. Toss cabbage with a spoonful of reserved dressing.
  4. Build bowls with rice, slaw, cucumber, avocado, mango, fish, and remaining sauce.
