Seared Ahi Poke Bowl

Ingredients

  • 8 oz sushi-grade ahi tuna, cubed
  • 1 tbsp low-sodium shoyu
  • 1 tsp sesame oil
  • 1 tsp rice vinegar
  • 2 cups cooked brown rice
  • 1 avocado, sliced
  • 1 cucumber, sliced
  • ½ cup shelled edamame
  • ¼ cup prepared limu
  • Sesame seeds

Directions

  1. Pat ahi dry and sear in a very hot skillet for about 30 seconds per side.
  2. Whisk shoyu, sesame oil, and rice vinegar; gently coat the ahi.
  3. Divide rice between bowls and arrange avocado, cucumber, edamame, and limu.
  4. Add seared ahi and finish with sesame seeds.
