Poke — to slice or cut
The bowl is simple because the fish is fresh: cubes of ahi, sea salt, limu, green onion and a little sesame over warm rice. Poke began as the fisher's way of seasoning trimmings and remains one of Hawaiʻi's most everyday pleasures.
The truck tailgate makes a fine lunch counter. Boards lean nearby, sets feather across the reef below, and every bite comes with a view no dining room could improve.
