A roadside coconut is its own kind of refreshment: the husk is opened only when you order, a simple plant-fiber straw goes in, and the cool water tastes faintly of the place where it grew.

In old Hawaiʻi, niu supplied drink, food, oil, fiber, cordage and vessels. Nothing useful was thrown away. Even at a humble fruit stand, one green coconut carries an extraordinary history of voyaging and everyday ingenuity.
