Shave ice descends from Japanese kakigōri, brought by plantation workers who shaved block ice with their tool blades. Real shave ice is shaved, not crushed, so the syrup soaks all the way through instead of sinking.

The row of bottles is the whole menu and the whole decor. Locals order theirs with ice cream on the bottom and sweet cream over the top.
