Sunset Sesame Tofu

Serves 4

Ingredients

  • 14 oz extra-firm tofu, pressed
  • 2 tbsp sesame seeds
  • 2 cups shelled edamame
  • 4 baby bok choy, halved
  • 2 carrots, shaved into ribbons
  • 1 tbsp low-sodium shoyu
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil

Directions

  1. Blend cooked edamame with vinegar, 2 tablespoons water, and a pinch of salt.
  2. Cut tofu into 4 slabs, coat with sesame, and sear 4 minutes per side.
  3. Sauté bok choy and carrot ribbons until crisp-tender; add shoyu and sesame oil.
  4. Spoon edamame purée onto plates and add tofu and vegetables.
