Garlic-Pepper Tofu Bánh Mì

Garlic-Pepper Tofu Bánh Mì

Makes 2 sandwiches

Ingredients

  • 8 oz extra-firm tofu, pressed and sliced
  • 1 tbsp low-sodium shoyu
  • 1 garlic clove, grated
  • ½ tsp black pepper
  • 1 cup shredded green papaya
  • ½ carrot, shredded
  • 1 tbsp rice vinegar
  • 2 small whole-grain baguettes
  • Cucumber, cilantro, jalapeño, and lime

Directions

  1. Marinate tofu with shoyu, garlic, and pepper for 10 minutes.
  2. Toss papaya and carrot with vinegar and lime.
  3. Sear tofu in a lightly oiled skillet until golden on both sides.
  4. Fill warm baguettes with tofu, slaw, cucumber, cilantro, and jalapeño.
