King Oyster Mushroom “Scallops”

Thick mushroom stems sear into tender medallions, set over sunny corn with just enough garlic butter to make a weeknight feel celebratory.

King Oyster Mushroom “Scallops”

Serves 4

Ingredients

  • 6 large king oyster mushrooms
  • 3 cups sweet corn kernels
  • ½ cup low-sodium vegetable broth
  • 2 tbsp butter or olive oil
  • 2 garlic cloves, minced
  • 1 tsp lime juice
  • 1 cup watercress
  • Sea salt and black pepper

Directions

  1. Slice mushroom stems into thick rounds and score each flat side lightly.
  2. Simmer 2 cups corn with broth until tender; blend smooth with lime and seasoning.
  3. Sear mushroom rounds in half the butter for 3–4 minutes per side.
  4. Add garlic, remaining butter, and corn; spoon over purée and finish with watercress.
