Pineapple Sunset Cocktail

The tropical cocktail in a pineapple shell is a mid-century Hawaiian invention, born in the tiki bars of Waikīkī where bartenders competed on presentation as much as flavor. The shell keeps the drink cold and doubles as the garnish.

Pineapple Sunset Cocktail

Serves 1

Ingredients

  • 4 fresh pineapple chunks
  • 6 mint leaves
  • ½ oz fresh lime juice
  • 2 oz white rum
  • 1 oz pineapple juice
  • ½ oz simple syrup
  • Soda water, to top
  • Pineapple wedge and mint sprig, to garnish

Directions

  1. Muddle the pineapple, mint, and lime juice in a shaker.
  2. Add the rum, pineapple juice, and simple syrup.
  3. Fill with ice and shake until the tin frosts.
  4. Strain into an ice-filled glass.
  5. Top with soda and garnish with pineapple and mint.
