Creamy coconut foam over golden pineapple

Serves 1

Ingredients

  • 2 oz pineapple rum
  • 3 oz fresh pineapple juice
  • 1 oz cream of coconut
  • ½ oz lime juice
  • Ice
  • Pineapple leaf and a dusting of nutmeg, to garnish

Directions

  1. Shake the rum, pineapple juice, cream of coconut, and lime with ice.
  2. Strain into a chilled coupe.
  3. Top with a thin layer of coconut foam and grate nutmeg over it.
  4. Garnish with a pineapple leaf.

For a foamy top, dry-shake the cream of coconut with a splash of pineapple juice before adding ice.
